Celebrate the occasion with delicious Rasmalai - recipe by Anindita Khan
Rasmalai is a
very popular Indian desert prepared with famous bengali sweet -Rasgulla.
It is
actually rasgulla
soaked in rich saffron flavored creamy milk. As our most awaited Durga Puja
is nearing, I wanted to post something special for all my friends.
So
here is the recipe of Baked Rasmalai, a customized version of a very popular
dessert.
Ingredients
:

This Rasgulla can
be prepared at home or
we can
buy it readymade.
Since
during Puja we all want to spend
less time
at kitchen, let
s prepare
Rasmalai at
home with readymade Rasgulla.
Milk
- 1 liter
Sugar
- 1/3 cup or As per your taste
Rasgulla - 10
pieces
Ghee
- 1 tbsp
Cardamom
powder -1/4 tsp
Saffron
-7-8 strands
Pistachio
-chopped - 2-3 tbsp
Almonds
(blanched and thinly sliced/slivered) -2-3 tbsp
Steps
:

Soak
the saffron in a tbsp of
milk.
squeeze
the rasgullas
gently to take out the extra sugar syrup. Take a non
stick pan and place it on a low flame.
Pour
1 tbsp of
ghee on the pan. When the ghee is little heated , place the squeezed Rasgullas in
it and fry them till the Rasgullas get
a light brown color. Switch off the flame.
To
make the saffron flavored milk (Malai), bring the milk to boil in a
deep, thick-bottomed non-stick pan . Keep the flame medium low and cook, stir,
till it reduces to three-fourth of its original volume. Scrape off the cream
that will collect on the sides.
Add
sugar, cardamom powder and the soaked saffron .Mix them well until the sugar
dissolves. Switch off the flame.
Add
some almonds and pistachio and mix them well. Now take the fried rasgullas
,drop them into the creamy milk and cool it for some time.
Serve
this Rasmalai with
baked Rasgullas
garnished with more almonds and pistachio
